Portuguese National Dish Recipe

Hey, Porto here! Fancy a little secret about Portugal’s unofficial national dish?

Whenever I try to show what Portuguese cuisine really means in a single dish (a nearly impossible task, if I’m honest), there’s one recipe I often think about first: Cozido à Portuguesa. Literally translated, it means something like “everything boiled the Portuguese way.” Not the most glamorous name, I know!

And visually? I’ll admit it… it may not be the most beautiful dish I serve. But flavor-wise, few meals represent me and my traditions better than this one.

Over the years, many people have called it Portugal’s national dish. Now, I can’t promise every Portuguese person agrees with that. In fact, if you ever ask two Portuguese people to agree on the best dessert in the country, you might end up listening to a debate that lasts for hours.

But when I think about the foods that truly represent my culture — generous, rustic, full of history — Cozido à Portuguesa is always part of the conversation.

When I cook Cozido à Portuguesa

I like to prepare this dish the way it has been cooked in Portuguese homes for generations.

A big pot. Slow cooking. Many ingredients coming together. Different cuts of meat, sausages, and vegetables simmering until everything blends into something comforting, rich, and deeply traditional. It’s not a rushed dish. And maybe that’s part of why I love it so much.

At some point, I realized something interesting. Visitors weren’t just curious about tasting Portuguese food. They wanted to understand how it’s made, where it comes from, and why it matters so much to the people who cook it.

That’s why I started inviting people into my kitchen. During a relaxed show-cooking class, guests cook Cozido à Portuguesa together with Joana — one of my food-obsessed guides — and her mother. Between stories, ingredients, and techniques, the dish slowly comes to life.

Somewhere along the way, people usually discover something important: Portuguese food isn’t complicated and it’s full of history. Bom apetite!
