Whenever I try to show what Portuguese cuisine really means in a single dish (a nearly impossible task, if I\u2019m honest), there\u2019s one recipe I often think about first: Cozido \u00e0 Portuguesa.<\/em> Literally translated, it means something like \u201ceverything boiled the Portuguese way.\u201d Not the most glamorous name, I know.<\/p>\n\n\n\n

And visually? I\u2019ll admit it… it may not be the most beautiful dish I serve. But flavor-wise, few meals represent me and my traditions better than this one.<\/p>\n\n\n\n

Over the years, many people have called it Portugal\u2019s national dish. Now, I can\u2019t promise every Portuguese person agrees with that. In fact, if you ever ask two Portuguese people to agree on the best dessert in the country, you might end up listening to a debate that lasts for hours.<\/p>\n\n\n\n

But when I think about the foods that truly represent my culture \u2014 generous, rustic, full of history \u2014 Cozido \u00e0 Portuguesa<\/em> is always part of the conversation.<\/p>\n\n\n\n

When I cook Cozido \u00e0 Portuguesa<\/em><\/h2>\n\n\n\n

I like to prepare this dish the way it has been cooked in Portuguese homes for generations.<\/p>\n\n\n\n

A big pot.
Slow cooking.
Many ingredients coming together.<\/p>\n\n\n\n

Different cuts of meat, sausages, and vegetables simmering until everything blends into something comforting, rich, and deeply traditional.<\/p>\n\n\n\n

It\u2019s not a rushed dish. And maybe that\u2019s part of why I love it so much. <\/p>\n\n\n\n

At some point, I realized something interesting. Visitors weren\u2019t just curious about tasting Portuguese food. They wanted to understand how it\u2019s made, where it comes from, and why it matters so much to the people who cook it.<\/p>\n\n\n\n

That\u2019s why I started inviting people into my kitchen. During a relaxed show-cooking class, guests cook Cozido \u00e0 Portuguesa<\/em> together with Joana \u2014 one of my food-obsessed guides \u2014 and her mother.
