It’s a holiday filled with music, dancing, costumes, wine, beer, and (of course) plenty of traditional Portuguese food. But Carnival isn’t just about parties. Behind the masks and celebrations, there’s actually a fascinating story… and it all starts at the table.

Carnival in Porto

What does “Carnevale” actually mean?

Here’s something many visitors don’t realize. The word Carnival (Carnevale) comes from Latin and literally means: “to put away the meat”. Yes, Carnival is about saying goodbye to meat. Why? Because Lent comes right after.

In the Christian calendar, Lent is 40 days of fasting and restraint leading up to Easter. Traditionally, Catholics avoided meat and rich foods, choosing simpler, humbler meals instead.

So before the quiet season… came the feast. Carnival became the last chance to indulge: to gather friends and family, cook generously, and enjoy all the good stuff while you still could. And in Portugal, that indulgence has a name: Cozido à Portuguesa.

A big, steaming pot filled with different meats, sausages, and vegetables, meant to be shared around the table. It’s hearty, festive, and wonderfully over-the-top (exactly what a “farewell to meat” meal should be).

<blockquote class="instagram-media" data-instgrm-permalink="https://www.instagram.com/p/C3S1FFgNY23/?utm_source=ig_embed&utm_campaign=loading" data-instgrm-version="14" style=" background:#FFF; Carnival is an excuse for friends, families, and solo travelers to indulge in dressing up, eating, drinking, and dancing… for three days straight.

There’s also a very old Carnival tradition that takes place in the region of Trás-os-Montes.
