From North to South, soup is a staple of our cuisine. And it doesn\u2019t matter if it\u2019s blazing hot or pouring rain, there\u2019s always a pot bubbling away somewhere. Today, we\u2019re highlighting one of the north\u2019s most comforting dishes:&nbsp;Rancho, a traditional stew that\u2019s as rich in flavor as it is in history. It\u2019s the kind of meal that truly fills you up (really!). Here\u2019s our recipe for Rancho, perfect for four hungry people.<\/b><\/p>\n\n\n\n<p><\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>350 grams of chickpeas<\/li>\n\n\n\n<li>4 large potatoes<\/li>\n\n\n\n<li>120 grams of macaroni<\/li>\n\n\n\n<li>250 grams of veal trotter<\/li>\n\n\n\n<li>250 grams of pork belly<\/li>\n\n\n\n<li>250 grams of &#8220;chouri\u00e7o&#8221;<\/li>\n\n\n\n<li>250 grams of boiled beef<\/li>\n\n\n\n<li>1 dessert spoon of paprika<\/li>\n\n\n\n<li>1 dessert spoon of lard<\/li>\n\n\n\n<li>2 decilitres of olive oil<\/li>\n\n\n\n<li>2 onions<\/li>\n\n\n\n<li>salt, to taste<\/li>\n\n\n\n<li>pepper, to taste<\/li>\n<\/ul>\n\n\n\n<h4 class=\"wp-block-heading\"><a href=\"https:\/\/tasteporto.com\" target=\"_blank\" rel=\"noreferrer noopener\">Pssst&#8230; Join our <strong> Food &amp; Drink Tours <\/strong>and discover a side of Porto that most tourists rarely see \u00bb<\/a><\/h4>\n\n\n\n<p><\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Rancho recipe<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Soak the chickpeas for a few minutes<\/li>\n\n\n\n<li>Cook all the meat as well as the chickpeas in water and add salt and pepper to taste<\/li>\n\n\n\n<li>Meanwhile, fry the chopped onions gently in the lard and olive oil<\/li>\n\n\n\n<li>Remove the meat(s) when cooked and dice it in edible cubes<\/li>\n\n\n\n<li>Dice the potatoes in small pieces<\/li>\n\n\n\n<li>Add the potatoes, the meats and the macaroni back with the chickpeas (the mixture should be thick enough to stand a wooden spoon upright in it)<\/li>\n<\/ul>\n\n\n\n<p>Season to taste and serve hot!<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Curious to taste Portuguese dishes like this with a local twist?<\/h2>\n\n\n\n<p><a href=\"https:\/\/tasteporto.com\/tours\/\" target=\"_blank\" rel=\"noreferrer noopener\">Join one of our Food &amp; Drink Tours, or let\u2019s craft a Private Custom Tour just for you \u2014 built around your favorite Portuguese flavors (Rancho included!)<\/a>.
