A Portuguese Favorite: Grandma's lamb recipe

In my last post, I told you about my grandma’s delicious lamb. I bet you can’t wait to try it. Well, you can cook it for next Sunday’s lunch. Just call up your family and friends, invite them over, and enjoy this delicious Grandma’s lamb recipe.

List of ingredients (serves 4)

For the lamb (3 hours)

  • 1.5kg of Lamb
  • 10 Potatoes cut in halves
  • 1 bottle of “Vinho Verde” (white wine)
  • 3 Cloves of garlic for each kilogram of lamb
  • 1 Lemon
  • Salt to taste
  • 1 Chili pepper
  • 3 Tbsp Olive oil

For the rice (1 ½  hours)

  • 1 Cup of rice
  • 1 ½ Cup of water
  • 1 Onion
  • A Tbsp of Olive oil
  • 5 slices of Prosciutto
  • 5 slices of Chorizo
  • ½ Tsp of cider vinegar
  • Salt to taste

Grandma’s lamb recipe

First, let’s talk about the main part of this dish. You’ll need at least a year-old lamb so go to your local butcher and choose their best lamb. As you may know, lamb has a strong taste. So, on the day before the meal,​ my grandma’s trick is to let the meat rest for five minutes in hot water so that the tallow taste goes away. Meanwhile, you need to prepare what we call “vinha de alhos”: you’ll need a bottle of “Vinho Verde” (a Portuguese type of white wine), three cloves of garlic for each kilogram of lamb, salt and lemon in quarters. After those first five minutes in hot water, you need to let the lamb cool and then cover it with the ”vinha de alhos” and leave it there.

Early in next the morning, prepare a sauce with three cloves of garlic, a chili pepper, three tablespoons of olive oil and a glass of “Vinho Verde”. Blend the lamb and some peeled potatoes with this sauce and put it onto a roasting tray into the oven for three hours at 250º C (482º F). There’s no lamb without oven-baked rice and to cook it you will need a clay pot. Gently fry a chopped onion with a tablespoon of olive oil and some drops of cider vinegar. When the onion is golden brown, add a cup of rice. Let it cook for a minute and add a cup and a half of water, some slices of Portuguese prosciutto and chorizo. This goes into the oven for one and a half hours.
